Black Walnut, an often overlooked but amazing tree. A very adaptable tree, Black Walnuts will grow in nearly any soil (just not standing water) and produce an abundance of delicious, high fat and high protein nuts quite reliably. The nuts can be tricky to get into, as the shell is harder than other walnuts. We bought a specialty nut-cracker that is proving very effective (reach out and we can point you in the right direction).
The trees can be tapped in late winter like Maples to obtain a delicious sap which can be boiled into a syrup that is far superior to Maple syrup by some accounts. We usually freeze a lot of the sap to have as a refreshing drink on hot summer days while working, as well as drinking plenty fresh. The wood is highly sought after amongst wood workers for its deep, rich brown inner wood. They are a very fast growing tree.
