Rhubarb is a beautiful plant that you only have to plant once, wait out the first year for it to get established and then harvest every year after that. Rhubarb is one of the first we see in the spring, poking through the mulch, harvested for the delicious stalk to cook in jams, baking and a variety of other ways. The leaves are toxic as they are very high in oxalic acid.
We love rhubarb as a layer in our forest garden underneath the fruit trees. It grows as a ground cover in early spring when there are no leaves on the trees just yet, suppressing undesirable grasses and filling the understory niche to produce more food in a higher density, creating layers throughout our gardens.
Rhubarb root can be traced back 5000 years for its medicinal uses. The rhubarb we have cultivated today for its stem is quite different and may not have the same effect as its ancestor grown in China.
